My first Baked Potato Bar
I was living at home with my mom in my mid-20’s. I had left home and come back a few times. This time I was attending college classes and working. That was always the deal when I came home. I needed to be in school, working or both.
Mom worked late nights. I worked most nights. Swing shifts. We would cook a meal or two and invariably have leftovers. This was the beginning of a baked potato bar. I don’t recall exactly what toppings we did have scrounging in the “fridge” (refrigerator) but I am certain there was broccoli, shredded cheese, sour cream and onions.
With the leftovers, the next day, I combined all the remaining ingredients, added a couple cans of condensed cream soups, added milk, water and butter. The loaded baked potato soup developed as I continued to add and tweak ingredients. It turned out to be a fabulous soup, better than the potato bar. Now, I am forever convinced, a potato bar is just step one to creating fantastic next day meals!
Reason for THIS Particular BP Bar
The first game day of the regular season football for Boise State University (BSU) Broncos. An away game. Regardless, this is the beginning of the annual weekly gatherings of Bronco fans amongst family and friends. I am certain other families and friends gather for their teams as well.
Like us, these gatherings come with traditions. Most notably, eating! Lots of eating! Still more eating! All while watching football. Yes, drinking is a part of the festivities too. Especially for the games held later in the day. Clearly, there is exception for this and many a football fan wakes up with beer in hand ready for a game! But don’t let this fool you…wine is also fine!

Tail-gaiting vs. Home
Of course, tailgating is the first thing we think about when we talk football, food and drinks! Our group prefers to not mess with traffic or be cold sitting outside in less than desirable weather on a metal bench or stadium padded fold up seat. It’s easier to set up our football food spreads at home than to cart them to the stadium parking lot and set it up there. Plus, it’s free parking at home.
In this day and age with technology, we watch the game on TV (not free; but check out how you can access free TV here). Pause works great when we need to step away for a moment. Rewind. Record! All of it. This has been a blessing for me. I have a friend who has been caught on ESPN camera so many times at these BSU games (and other BSU events by other camera operators) that I can’t count them anymore. We always rewind and pause for verification but yes, indeed, she is our BSU graduate game celeb! I hope she will share the pictures with me!
