The Original Inspiration of Baked Potato Leftovers
If you saw the first article in this series, I believe I divulged there the first potato bar was inspired by refrigerator leftovers, not from a baked potato bar intentionally. It was a colder day out and when all else fails, dumping a bunch of ingredients into a pot and calling it a soup was on the agenda.
In this case, the dumping of refrigerator treasures became my Loaded Potato Bar Soup. I’ll be honest, I don’t remember exactly everything that went in there. But I do know it was a huge hit and was devoured! I have taken some time to attempt to recreate it in order to share it with you here.

What to Do With Extra Baked Potatoes?
The first thing I would suggest is using a handful of these already baked spuds for Twice Baked Potatoes and Tater Skin Appetizers. Your work is half done since the potatoes have already been cooked.
How do I Use the Toppings from My Baked Potato Leftovers?
- Broccoli with cheese sauce
- chili cheese omelettes
- carnitas tacos/fish stick tacos
- montana tacos
- mashed potatoes
- breakfast hash with bacon or spam
- crescent roll hot pockets – ham pineapple or philly style
- philly style sliders
